Municipality logs for your restaurant
The municipality inspector asks for the temperature log, the cleaning schedule, the receiving log and the Person In Charge certificate — and you're hunting for a sheet. Print ready logs with the right temperature limits (chilled ≤ 5°, frozen ≤ −18°, hot holding ≥ 60°, cooking 75°), in Arabic and English, per shift, with the «Person In Charge» sign for the wall. From Dubai Municipality's requirements.

How to use it
- Type the establishment's name, the Person In Charge, and the number of fridges, freezers and hot-holding units.
- Pick the logs you need and the month, and print them (one page per log, bilingual).
- Hang the Person In Charge sign near the till, fill the logs every shift and sign them.
Questions
What are the right temperatures?
The danger zone is 5–60°C (Dubai Municipality Food Code). Chilled ≤ 5°, frozen ≤ −18°, hot holding ≥ 60° (not 63 — that's a UK figure), cooking and reheating to a core of 75°, two-stage cooling: 60 to 21 within two hours then to 5 within four, thawing in the fridge. Reject any frozen delivery warmer than −18 or thawed.
How often do I record temperatures?
Dubai Municipality requires checks every shift through the FoodWatch platform (an opening check at the start of each shift, receiving, operations and equipment). Our log has two slots per day (morning and evening) you can extend. The official minute-by-minute frequency isn't published on one page, so follow what your inspector asks.
Who is the Person In Charge (PIC)?
Every food establishment in Dubai employs at least one full-time Person In Charge holding a food-safety certificate (written exam, valid 5 years); service establishments preparing high-risk or ready-to-eat food need a PIC on every shift. The name is displayed behind the till or somewhere visible. If the PIC leaves: a replacement within 30 days, registered within 45.
Abu Dhabi and Sharjah?
Abu Dhabi: the Abu Dhabi Agriculture and Food Safety Authority (Resolution 6/2020 general requirements) closes establishments without temperature records; we haven't verified its temperature figures and PIC text, so apply Dubai's limits as a minimum and ask the inspector. Sharjah: not verified in this round.
